This is a hot chocolate that will have all of you happy: body and soul, taste buds and hormones, tummy and immune system! Its warming and perfect for this time of year when you want to cozy up with a rich, comforting, sumptuous drink. Its ‘indulgent’ – and its great for you. You can drink this in the morning (I drink it this or some variation of it with or before my breakfast), or at night as a dessert an hour or so before bed to aid with sleep. It has good fats that are balancing for your blood sugar (important in the morning, as well as before bed). Its beneficial for hormone health, for metabolism, it’s antioxidant rich and immune system boosting. Yeah… I’m still talking about hot chocolate. It’s also super easy to make! You can get creative with variations of it, so definitely experiment with the optional add-ins.
Here it is paired with my breakfast: 2 over easy pasture-raised eggs, sauteed local greens, ½ apple with cinnamon and tahini. Food + drink took 10 minutes total to prepare.
Happy Hot Chocolate
2 Tbsp organic, unrefined coconut oil or grass-fed ghee
1 Tbsp organic cacao powder
½ tsp cinnamon
2 Tbsp grass-fed collagen powder (or 1 serving amount per your specific collagen)
1-2 tsp maple syrup or honey
10oz hot water (a mug’s worth)
1 tsp pure vanilla extract
Pinch of cardamom
Pinch of nutmeg
Pinch of himalayan sea salt
Pinch of cayenne
Put water on stove to boil. While you’re waiting, place all other ingredients in a blender. Once water is boiled, add enough water to blender, and blend until oil is emulsified, about 15-30 seconds. Pour a little into a mug and taste. Adjust sweetness and spices as desired, blend again for a few seconds, pour, sip, sit back and ‘indulge’.
