…Welp, anyway, these here are seriously more satisfying than any junky diner version, and may feature a starring role in your dreams yet. The “breading” is tasty as hell, and nutritious as… heaven? Thigh meat is my favorite part of the chicken for sure (other than the tail/butt on a full roasted chicken – that thing is crunchy and juicy goodness). See – you want fattier meat. The more *high quality* fat the better! Fat is the building blocks for your cells and hormones, it carries nutrients, it satiates and balances blood sugar. No more fat fear! I’m on a mission…
Try ‘em. Its a quick, simple, delicious protein that pairs well with most side dishes! I will often make these for dinner with some creamy cauliflower mash, and lemon + EVOO sauteed asparagus. I will also use the leftovers for salads throughout the week, onto which I will also put a variety of roasted vegetables, nuts/seeds, avocado, and a simple dressing.

Paleo Breaded Chicken
1 lb organic chicken thighs
2 pasture-raised eggs
½ cup cassava or coconut flour
1 tsp ginger powder
1 tsp garlic powder
1 tsp ground turmeric
1 tsp sea salt, plus more to taste
6 Tbsp olive or coconut oil
Use a fork to scramble together the two eggs into a bowl. Set aside. On a plate, mix together dry ingredients with whisk. Dip each chicken thigh in the egg to coat, then dredge both sides in the flour mixture. Put on a plate until ready to cook.
Heat oil in a large saute pan over medium heat. Once hot, add chicken, and first brown slightly on both sides. Then lower the heat, cover and cook until no longer pink on the inside. Serve with a big salad and/or roasted vegetables.
